Allison Marchetto is a server at South Hadley’s Iya Sushi and Noodle Kitchen, a restaurant she describes as “a modern-day sushi and noodle kitchen” with a laid-back atmosphere. She’s worked at the restaurant since the day it opened 6 ½ years ago. When Marchetto, 37, of West Springfield, isn’t working at Iya Sushi, she’s taking care of her two daughters Gianna and Georgina, doing floral arrangements and planning her brother’s wedding.
Why did you decide to work at Iya Sushi and Noodle Kitchen?
I was unemployed after having my daughter. Iya Sushi was a new and upcoming business that was opening, and it looked like a good job for me, working as a part-time server and being a mom at the same time.
Do you have an opening greeting?
I say, “Hi my name’s Allison, how are you today? I’ll be taking care of you.”
Do you have any words or phrases you might think you might overuse?
I say yep a lot.
Yep?
Yep. [She laughs] I feel like we all do that.
Do you have a favorite food there?
Probably the bibimbap. It’s a traditional Korean stone bowl full of rice beans and veggies. It has cooked meat in it, some spinach and zucchini. You put a red chili sauce in, and it gives it a little heat. Delicious.
Do you get hungry on the job?
Of course. Working with food, I’m always hungry!
What do you think people should order on their first visit here?
I would go straight for some sushi, probably basic, like a salmon roll or tuna roll if they eat raw fish. If they don’t, our hibachi is delicious.
What do regulars tend to crave?
These days, the ramen: it’s a big bowl of soup. The traditional, classic Tokyo style is really popular.
What’s the best part about working there?
The customers, the environment. It’s very laid back. Everybody gets along with each other. It’s just a good feel.
What’s the nicest thing a customer has done for you?
When we first opened, a customer found out I was a new mom, and they came back with a little baby onesie for my daughter. That was very nice.
What’s the weirdest thing a customer has asked you?
People ask if the meat is cooked. Since some of the sushi has raw fish in it, they sometimes ask if the beef is cooked, and I’m like, “Of course the beef is cooked!”
Are you your true self at work?
It depends. Sometimes it feels like you have to put on a mask, almost, in this industry. But for the most part I am myself, yeah.
Do you have a dream job?
I do. I would love to be a wedding planner. I’m actually planning help my brother’s now. Doing all his flowers, too. I love the details. I’m a detail-oriented person. But making sure everything comes together as planned can be difficult.
If you had a superpower, what would it be?
Invisibility. I want to see what’s going on when I’m not around!
