Inside Business: Heff’s Cowboy Kitchen - Estes Park Trail-Gazette

Brian Heffernan has been in the food business for decades, and now, after moving to Estes Park with his wife Francesca, he is in the food truck business.

Heffernan owns Heff’s Cowboy Kitchen food truck, and you can’t miss its bright green exterior when you spot it in town at some of the local watering holes.

Heffernan is originally from Chicago, and was wintering in Arizona after back surgery when his brother, who lives in Estes, suggested coming out and starting up a food truck. He made a visit to Estes, finding space and days at Rock Cut and Lumpy Ridge.

“I then got specifications and requirements from the health department on what I needed to do, then went back and built the truck in two months and moved out here,” Heffernan said.

He owned The Shrimp Walk in Highwood, Illinois for 25 years before losing it in the recession, so he isn’t a newcomer to the food game.

“I was out of the business for about 10 years, but it has always been in the back of my mind to do a food truck, especially now,” Heffernan said. “Instead of having 25 employees, I now have two, my wife and I.”

Heff’s Cowboy Kitchen offers a lot of options, from barbecue to seafood. It might be the only place in town you can get jambalaya, trout tacos and crab cakes all in one spot. They opened Memorial Day weekend, and Heffernan said that people have been enjoying the food and have been coming back as well.

“It is a lot harder than the restaurant business though, but it is seasonal,” Heffernan said. “My wife helps a lot, does all our social media, works on the truck and more.”

They take cash and cards, and they operate throughout the week,  and you can find them on Sundays at Trout Haven resorts, Mondays at Lumpy Ridge, Tuesdays and Fridays at Rock Cut, and Wednesdays and Saturdays at The Barrel.
